Apricot and Lentil Soup
(yes, it sounds weird, but it's so good)
1 chopped onion
2 cloves of minced garlic
90 grams dried apricots, quartered
300 grams red lentils
1 ltr of veggie stock (low salt variety is best)
4 chopped roma tomatoes - peeled and deseeded if you prefer - I don't bother
1 tsp ground cumin
1/2 tsp thyme
black pepper to taste
2 tbsp lemon juice
Instructions:
1. Put the onion, garlic, lentils and veggie stock in a pot and simmer it all for 30 minutes.
2. Add the tomatoes and spices and simmer 10 more minutes.
3. Stir in the lemon juice.
4. Purée half of the soup, then return to the pot and stir together.
