Baked Quinoa and Veggies

Instructions:
  1. Put quinoa, broth, veggies, and spices (except parsley/cilantro) into casserole dish with lid.
  2. Cook at 180 degrees C for 20-30 minutes or until all the water is absorbed.
  3. Remove the bay leaf.
  4. Stir in the minced fresh parsley or cilantro.
